Eddoes or eddo is a tropical vegetable often considered identifiable as the species Colocasia antiquorum, which is primarily used for its thickened corms. They have a somewhat acrid taste if not carefully cooked. Its barrel-shaped outside has inedible “hairy” skin. Inside, its flesh can range from white to grey. Eddoes have a light crumbly texture with a slightly sweet flavour. Eddoes can be roasted, fried or boiled.
